Heat a splash of olive oil in a large, shallow casserole dish over a medium heat. Add the soffritto mix (250 g) along with a sprinkling of salt and sauté for 5-10 minutes, until softened. Add the garlic (4 cloves) and cook for a further 2-3 minutes, until fragrant.

Stir in the passata (1 bottle), bay leaf (1), red wine flavour pot (1), lentils (2 tins) and their water.

Bring to a simmer then turn the heat to low and allow to ​blip away over a medium-low heat for around 25 minutes, until the sauce has thickened. Season to taste.

Meanwhile, preheat the oven to 200°C/fan 180°C/gas mark 6. Spoon the carrot and swede mash (2 packs) over the lentils and top with the breadcrumbs (2 tbsp) and thyme (1 handful) along with a good drizzle of olive oil.

Bake for 15-20 minutes, until the top has crisped up and serve with vegetables of your choice.
