Pat the fish (2) dry with kitchen towel and sprinkle with sea salt. Cut into 5cm x 3cm chunks. Place in a bowl and sprinkle over the coconut and lime seasoning (2 tbsp), gently tossing evenly to coat.

Pour boiling water over the peas (200 g), set aside for 2 minutes then drain. Combine in a bowl with the spring onion (2), limes (2) juice and sesame oil (1 tsp), season with salt and pepper then mash with a fork to break down the peas.

Heat a splash of oil in a pan over a medium heat and fry the fish for 2 minutes on each side, without moving, until just cooked through. Set aside to rest on kitchen towel.

Cook the bao buns (8) according to the pack instructions.

Serve each bao filled with the fish, pea salsa, dipping sauce (as needed) and aioli (as needed).
