Heat 1 tbsp olive oil in a griddle pan over a medium heat, then fry the sourdough (3 slices) for 1-2 minutes on each side.

In a small bowl, mix the Calabrian chilli (4 tbsp) with 1-2 tbsp olive oil. Mix in the oregano (1 tsp) and basil (3) along with some salt and pepper.

Spread the chilli mix onto the toasted sourdough, then layer the mozzarella (1 slice) and salami (2 slices) on top.

Finish with a couple of small basil leaves and any extra seasoning, if you like.
