Preheat the oven to 200°C/180°C fan. Line a baking sheet with parchment.

Unroll the pastry (1 pack) onto the baking sheet. Score a border about 1.5cm from the edge of the pastry, and using a fork, prick the pastry inside the border.

Whip together the soft cheese (100 g), 100g of the goat’s cheese (125 g) and ¾ of the thyme (2 sprigs). Brush the pastry with the beaten egg (1), then spread the cheese mix over the pastry, avoiding the borders. Chill in the fridge for 10 minutes.

Coat the pear slices (3) in the honey (1 tbsp), then lay them on top of the cheese mix along with the remaining thyme leaves and goat's cheese . Add a good grinding of pepper. Bake for 20 minutes, or until the pastry is golden and risen and the pears have lightly caramelised.
