step 1
Sieve the flour (75 g) and baking powder (1 tsp) into the mashed potato (250 g). Whisk in the eggs (2), milk (125 ml) and chives (1 tsp) until smooth.

Heat a little sunflower oil (1 tsp) and some of the butter (1 knob) in a non-stick frying pan over a medium heat. When hot, add 1 tbsp batter for each pancake and cook 4 at a time for 1 minute, until the bottom is golden brown and bubbles appear on the top. Flip then cook until golden. Keep warm while you cook the remaining pancakes.

Serve with the crème fraîche (2 tbsp), M&S Collection festive chutney (2 tbsp), smoked salmon (1 pack) and lemon wedges (1).
