Whisk the eggs (2) with a pinch of salt and the mixed spice (1/2 tsp).

Heat the butter (1 tbsp) in a non-stick frying pan over a medium heat.

While the pan is heating, dip three slices of brioche (3 slices) into the egg mixture one at a time, holding down for a couple of seconds on each side.

Fry the soaked brioche in the butter for 2-3 minutes each side until golden.

Cut each slice in half and serve with M&S gingerbread flavour syrup (to taste), yogurt or mascarpone (to taste), berries (1 handful).
