Whisk the eggs (8) in a large bowl and season with salt and pepper.

Heat a splash of olive oil (as needed) in a large, non-stick, ovenproof frying pan over a medium heat.

Add turkey (500 g) and any other leftovers then season and fry for a few minutes until starting to brown.

Mix in 1 tbsp ’nduja paste (1 tbsp) to coat the leftovers, and cook for a minute.

Pour in the eggs and stir lightly.

Scatter in cheese (100 g) and add the remaining ’nduja paste (1 tbsp) in dollops for some pockets of spice.

Pop in a preheated oven (200ºC/180ºC fan/gas mark 6) and bake for 15-20 minutes, until just set.
