Preheat the oven to 200°C/180°C/gas mark 4.

Season your chicken thighs (1 pack) with salt and pepper. Heat a pan with 1tsp vegetable oil and once hot, seal the chicken on all sides.

Add the thighs, orzo (200 g), stock (500 ml), lemons (2) and artichokes (1 jar) to a roasting tray.

Roast for 25 minutes, ensuring the chicken is cooked all the way through and the orzo is soft.

Top with parsley (1 handful) before serving.
