A delightfully fresh and fragrant Premier Cru Burgundy with evocative notes of cherry, wild strawberry, liquorice and minerals.
Located just to the north of Gevrey-Chambertin, the little-known Burgundy appellation Fixin benefits from the same climate and south-east exposure as its more famous neighbour. What’s more, the vineyards here grow at much the same altitude as Gevrey-Chambertin’s, and on the same limestone/clay soils. The monks of Citeaux first started making wine on the Clos de la Perrière site way back in the 12th century, and their reputation for methodically identifying and cataloguing the region’s best sites is still legendary 900 years on. The ‘Clos’ is a single 12 acre plot owned exclsuvely by Bichot – what the French call a monopole. This wine was made by Alain Servau, who has been the head winemaker at Albert Bichot for over 20 years. Grapes were vinified in temperature-controlled conical vats before the wine was transferred to French oak barrels (30% new oak) for malolactic fermentation and ageing over 15 months.
