Cut the halloumi (500 g) into long, thick slices.

Add the egg (1) to a shallow bowl. Add the flour (50 g) to a second shallow bowl. Add the breadcrumbs (50 g) and sesame seeds (2 tbsp) to a third shallow bowl.

Dip the halloumi first in the flour, then the egg, then the breadcrumbs.

Add to a greaseproof-lined air fryer tray and cook at 180°C fan for 15 minutes, turning halfway, until golden brown.

Meanwhile, add the sherry vinegar (2 tbsp), the zest and juice of the limes (2), and 2 tsp hot maple (2 tsp) to a large bowl with a glug of olive oil. Whisk together then season to taste with salt and pepper. Stir in the cabbage (1/2) and set aside for 10 minutes. Gently stir through the grapefruit (1), easy peelers (4) and parsley (10 g).

When the halloumi is almost ready, gently warm the hot maple (3 tbsp) and 2 tbsp sesame seeds (2 tbsp) in a small frying pan over a medium heat.

Serve the crispy halloumi with the slaw and a drizzle of the hot maple.
