Rinse the rice (200 g) under cold water until the water runs clear. Bring a large pan of salted water to a boil, then add the rice. Cover and simmer for 15-18 minutes, until cooked. Remove from the heat and drain well.

Meanwhile, heat a large wok or non-stick frying pan over high heat. Add a glug of oil, followed by the beef mince (1 pack). Cook for 5-6 minutes until the beef mince has developed a deep golden crust, then stir, breaking up with a spoon. Cook for a further 5 minutes until golden brown.

Add the diced onion (1) and cook for 3-4 minutes, until the onion has softened. Add the nasi goreng paste (1 jar) and the cooked rice and stir-fry for another 5 minutes.

Meanwhile, heat another large non-stick frying pan over medium-high heat and add a glug of oil. Crack the eggs (4) into the frying pan and cook for 3-5 minutes, until the whites are set and the yolks are cooked to your liking.

Serve the beef nasi goreng in bowls, topped with the fried eggs, sliced cucumber (1) and tomatoes (4). Sprinkle over some crispy onions (2 tbsp) (optional) for extra crunch.
