Finely slice ¼ of the onion (1/4) and add to a small bowl. Squeeze over the juice of the lime (1). Add a pinch of salt and set aside.

Finely dice the remaining onion (3/4). Add a splash of oil to a deep, large frying pan over a medium heat and add the diced onion with a pinch of salt. Sauté for 6-7 minutes, until softened, then stir in the garlic (3 cloves) and cook for a further minute.

Stir in the mince (500 g) and fry for 5 minutes, until browned. Stir in the chipotle paste (1 tsp), soup (1 tin) and chopped tomatoes (1 tin). Re-fill the tomato tin halfway with water and add this too. Bring to a gentle simmer.

Simmer the chilli for 20 minutes over a medium heat, until thickened. Season to taste with salt and pepper. Set aside to cool slightly.

Preheat the oven to 200°C/180°C fan/gas mark 6.

Divide the chilli mixture between the tortillas (8), rolling into sausage shapes and sealing at the edges. Nestle into a large, deep baking tray (20 x 30cm).

Top with the cheddar (100 g) then bake for 15 minutes, until golden and bubbling.

Serve with the quick-pickled red onions and some coriander (5 g) on top.
