Peel the potatoes (600 g) and chop into chunks. Add to a large pan and cover with water. Add a pinch of salt. Bring to the boil, cover then simmer for 15 minutes, until tender. Drain and allow to steam dry. Mash with a potato masher.

Add the milk (2 tbsp) and butter (15 g) back to the potato pan and gently warm through. Stir in the mashed potatoes. Season with salt and pepper. Allow to cool slightly.

Sift in the flour (175 g), then stir in the spring onions (1 bunch), everything seasoning (1 tbsp) and grated cheddar (50 g). Beat one of the egg (1) and add this to the mix. Form into around 12 ball-shaped pieces, then flatten into discs.

Preheat the oven to 180°C/160°C fan/gas mark 4.

Heat a non-stick frying pan over a medium heat and add a splash of oil. Fry the potato cakes, working in batches, for 2-3 minutes on each side.

Keep the cooked potato cakes warm on a greaseproof-lined tray in the oven.

Meanwhile, add the beans (2 tins) and ketchup (1 tbsp) to a small frying pan and gently warm through.

When the potato cakes are ready, wipe the pan clean and put it back over a medium heat with a splash of oil. Fry the remaining four eggs (4) for 3-4 minutes, until cooked to your liking.

Serve the potato cakes with the beans and the fried eggs, with some extra everything seasoning sprinkled on top of the egg, if you like.
