Heat a splash of oil in a large casserole over a medium heat and add the frozen soffritto (200 g) with a pinch of salt. Cook for 5-7 minutes, until softened.

Meanwhile, add the tomatoes (2) to a heatproof bowl and pour over boiling water. Set aside for 4 minutes then drain. Peel the skins off with your fingers or a small knife and then dice.

Stir the tomatoes into the pan along with the chickpeas (1 jar) and their liquid. Add the stock (1) and the boiling water (500 ml).

Simmer for 5 minutes, then taste to adjust the seasoning. Add the tortellini (2 packs) and bring to the boil, then turn the heat down to a simmer and cook for 4 minutes or until the pasta is cooked. Add a splash more water if needed.

Ladle into bowls and serve with a dollop of pesto (4 tbsp) on top.
