Bring a large saucepan filled with lightly seasoned water to a boil. Once boiling, add the orzo (280 g) and cook for 8 minutes. Reserve 1 cup of pasta water and then drain.

Meanwhile, heat a large non-stick frying pan over medium-high heat. Add a glug of olive oil and squeeze the sausage meat (1 pack) out of the skins into the pan, breaking up with a wooden spoon.

Cook for 8 minutes, then stir through the chopped broccoli (1 pack) and chilli flakes (1/2 tsp). Cook for a further 4 minutes, until the broccoli is tender and the sausage meat is cooked through.

Meanwhile, add the egg yolks (2) and pecorino (75 g) to a mixing bowl and season with salt and pepper.

Once the sausage meat is cooked, add the drained orzo to the pan along with ½ cup of the reserved pasta cooking water. Remove from the heat and stir in the cheesy egg yolk mixture, mixing vigorously until you have saucy orzo. Add a splash more of the reserved pasta cooking water if needed to create a glossy sauce.

Serve immediately and top with an extra grinding of black pepper and a grating of pecorino.
