To make the Cajun wedges, bring a pan of salted water to the boil and cook the potatoes (750 g) for 10 minutes. Drain then allow to steam dry. Place in the air fryer and drizzle with olive oil, then toss in the Cajun seasoning (1 tsp). Cook for 25 minutes, turning halfway, until golden.

Alternatively, place onto a baking tray, drizzle with olive oil and toss in the Cajun seasoning, then cook preheated oven at 220°C/200°C fan/gas mark 7 for 35 minutes, turning halfway, until golden brown.

To make the fish fingers, cut the fish (4) into 2cm wide, finger-sized strips and season with salt.

Blitz the bread (100 g) in a food processor to form breadcrumbs. Decant into a shallow bowl.

Add the flour (50 g) to a separate shallow bowl, and the egg (1) to a third shallow bowl.

Dip the fish first into the flour, then the egg, then the breadcrumbs.

Air fry at 200°C for 10 minutes, until golden brown (you can do this at the same time as the potato wedges, if your air fryer is big enough. Alternatively, keep the potatoes warm in the oven while you cook the fish).

To make the pea smash, add the peas (250 g) to a pan and cover with water and a pinch of salt. Bring to the boil then simmer for 2 minutes. Drain, then add to a bowl with the mint (10 g), lemon juice and zest (1). Roughly mash with a potato masher then stir through the yogurt (2 tbsp). Season with salt and pepper.
