Preheat the oven to 200°C/180°C fan/gas mark 6. Place the slices of bread (4 slices) on a baking sheet and drizzle with a little olive oil, then sprinkle each with everything seasoning (1 tbsp), reserving a little to garnish. Bake for 5 minutes until golden brown and crisp. Meanwhile, mix the prawns (300 g) with the seafood sauce (100 g).

Remove the outer leaves from the lettuce (2) and discard, then chop off the core at the bottom.

Shred one of the lettuces and squeeze over juice of half a lemon (1/2). Separate the remaining lettuce into leaves and refresh in ice water.

Dice the avocado (1) and dress with the juice of half a lemon (1/2). Season with salt.

To assemble, layer the whole lettuce leaves into four glasses or glass bowls. Top with half of the prawn mixture, half of the avocado, and the shredded lettuce. Repeat with the remaining lettuce and finish with the remaining prawn mixture.

Sprinkle the prawns with the remaining everything seasoning (1 tbsp) and add a pinch of cayenne pepper (1/2 tsp). Serve with the toasted bread and the remaining lemon (1), cut into wedges.
