Heat a large frying pan over medium heat. Add a glug of olive oil (or coconut oil, if you have it) and tip in the onion (1) and peppers (2). Cook for 5-7 minutes, until softened.

Add the smokehouse seasoning (2 tbsp), Italian seasoning (1 tbsp) and tomato, garlic and herb paste (2 tbsp) and cook for 2 minutes. Tip in the shellfish stock (300 ml) and coconut milk (1 tin) and bring to a boil. Reduce to a simmer and add the fish pie mix (1 pack). Leave to cook, undisturbed for 7-10 minutes, until the fish is cooked through.

Season to taste with salt and pepper and stir in the lime juice from 1 lime (1).

When you’re ready to serve, heat the 7 grain medley (2 pouches) for 2 minutes in the microwave, according to packaging instructions.

Spoon the rice into four bowls and top with the fish stew, then scatter with coriander (10 g). Serve with the remaining lime wedges (1).
