caster sugar
For the martini
100 ml
freshly brewed espresso
100 ml
M&S coffee liqueur

Place the vodka (200 ml), mincemeat (2 tbsp) and sugar (1 tbsp) in a sterilised clip-top jar and leave to infuse for 48 hours, shaking now and again.

Strain through a sieve.

Make the martinis in two batches. Place half the mincemeat vodka in a cocktail shaker with half of the espresso (50 ml) and half of the coffee liqueur (50 ml). Shake until the cocktail shaker feels cold, then pour into two martini glasses.

Repeat with the remaining vodka, espresso (50 ml) and coffee liqueur (50 ml) to make 4 martinis.

Garnish with a coffee bean (4) on top.
