Preheat the oven and two baking sheets to 200°C fan.

Remove the pizza sourdough (2) balls from the packaging and place on a lightly floured surface.

Cut each ball into half and roll each piece into a smooth ball. Stretch the dough with your hands or a rolling pin until you have a 2cm-deep round pizza base.

Brush olive oil onto the base of each pizza and then fold in half. Brush oil on the top of each folded pizza.

Add the dough to the preheat trays and bake for 10-15 minutes until risen and golden.

Carefully lift the top half of each pizza sandwich and spread a generous layer of pesto (2 tbsp). Add the torn mozzarella (2), sliced tomato (2), basil (8), prosciutto (1 pack) and rocket (40 g). Finish with a drizzle of truffle oil (as needed).
