Preheat the oven to 200°C/180°C fan/gas mark 6. Cook the sausages (2) according to pack instructions for 20 minutes. Tear the pitta bread (1) into bite size pieces and toss with ½ tbsp of the olive oil (2 1/2 tbsp) in a roasting tin. Season well and bake for 8-10 minutes along with the sausages until golden and crunchy.

Meanwhile, whisk together the remaining oil with the mustard (1 1/2 tbsp), honey (1 tbsp), lemon juice (1/2 tbsp), and plenty of seasoning. Once the sausages are cooked, roughly chop and toss with 1tbsp of the dressing.

Stir the remaining dressing into the yogurt (4 tbsp) and season with plenty of black pepper. Toss together the lettuce (125 g), spring onions (1 bunch) and tomatoes (1) along with a few spoonfuls of the yogurt before drizzling more on top.

Scatter over the cooked sausage and crunchy pitta bits to serve.
