Mix the mango (1/2), tomatoes (200 g), lime zest and juice (1), olive oil (4 tbsp), coriander (1 bunch) and red onion (1/2) in a bowl, season and set aside. Season the sea bass fillets (2) with salt and pepper.

Heat a frying pan over a medium heat, add the olive oil (1 tbsp) then place the sea bass fillets skin-side down. Cook for 6 minutes, until golden. Turn the fish onto the flesh side and cook for a further 1 minute, then remove. Top each fillet with a generous spoonful of salsa and serve.
