Heat a small knob of butter in a small non-stick frying pan over a medium heat.

Add the onions (1) with a pinch of salt and fry for 2 minutes.

Stir in the korma paste (1 jar) and fry for another 2 minutes before adding the chickpeas (200 g), two-thirds of the coriander (25 g) and the diced tomato (1).

Give it a good stir, then add the beaten eggs (4). Cook for 2 minutes until the eggs begin to set on top.

Flip over and cook for another 2-3 minutes.

Remove from the pan and cut in half. Serve with the remaining coriander and salad (1 pack).
