In a bowl, mix together the blood orange juice (100 ml), two-thirds of the zest, the yogurt (500 g) and the maple syrup (3 tbsp).

Pour the mix into a freezer-safe dish and freeze for 3 hours, whisking every 40 minutes, until set.

Remove the frozen yoghurt 30 minutes before serving to allow it to soften slightly.

Scoop into bowls and top with the chopped pistachios (2 tbsp) and the remaining blood orange zest.
