To make the suya spice mix, combine the cayenne pepper (2 tsp), smoked paprika (1/2 tsp), ground ginger (1 tsp), ground nutmeg (1 tsp), garlic powder (1 tsp), ground cloves (1/2 tsp), ground cinnamon (1/2 tsp) and roasted peanuts (200 g) with 1 tsp salt in a bowl.

In a large bowl, combine 2 tbsp of your suya spice mix with 1/2 tsp salt, 10ml of the groundnut oil (10 ml) and the ginger (50 g). Add the steak (500 g) to the bowl and mix until evenly coated. Grab some wooden skewers and thread two pieces of meat onto each (3-4 skewers is an individual portion).

Heat a griddle pan over a medium-high heat and baste with the remaining groundnut oil (20 ml). Grill the skewers for 3 minutes on each side, or until cooked to your liking. Garnish with the coriander (1 bunch), sliced chillies (75 g), cayenne pepper (1 tsp) and roasted peanuts (100 g).
