Remove the outer packaging from the mussels (1 pack) and place both the unopened pouches in a saucepan of boiling water. Simmer gently for 8 minutes.

Meanwhile, cook the pasta (1 pack) according to the pack instructions.

When the mussels and pasta are ready, drain the pasta, reserving a little of the cooking water. Toss the mussels with the pasta, parsley (1 handful) (reserving some to serve), chilli (1) and sundried tomatoes (1/4 jar) Add a little more of the pasta water if the sauce looks too thick, then toss until glossy. Serve with extra fresh parsley on top.
