Melt the butter (1 knob) in a frying pan over a medium heat. Add the chilli (1) and spring onion (1) and fry for a few minutes until fragrant and slightly coloured, then push to the edge of the pan.

In the same pan, fry the bread (2 slices) for a few moments on each side. While still in the pan, spread the mango chutney (2 tbsp) over one of the slices, then top with the cheddar (40 g) and spoon over the chilli and spring onion.

Lay the other slice of bread on top and continue to fry the toastie on both sides until the cheese has melted and the bread is golden. Reduce the heat if the bread looks as though it might burn.

Remove the toastie from the pan, cut it in half and serve on a plate with a dollop of the tamarind and chilli ketchup (1 knob) on the side, if you like.
