HOW TO SERVE UP A VEGGIE
OR VEGAN FESTIVE FEAST

Whether you’re catering for vegans or vegetarians this Christmas, or you just want to try something a little different, we’ve got you covered. Deputy food editor Olivia Ferguson shares her top picks from our festive range

The star stack

Kick off Christmas dinner in style with our Collection ricotta stacks (available in store from 19 December). Back by popular demand, this veggie treat features baked ricotta topped with mushrooms, leeks, kale and a creamy white wine sauce – perfect served as a starter, or even as a main alongside roast potatoes and veggies.

For a vegan option, serve up our new Plant Kitchen vegan duck croquettes (available in store from 1 December). They’re made with shredded soya and balsamic onions, coated in golden, crunchy breadcrumbs and served with a tangy cherry hoisin sauce for dipping.

Look out for festive dishes landing in store throughout November and December.

The picture-perfect pie

For me, it doesn’t get much more impressive than this Collection mushroom, camembert and parsnip pie (in store from 19 December) – it’s guaranteed to be a hit with all the family. Mushrooms, sweet roast parsnips and a gooey camembert sauce are encased in the finest all-butter pastry, cleverly decorated to look like a mushroom. Try serving it with our Collection brussels sprout gratin (in store from 20 December), golden roasties and braised red cabbage.

Give it some welly

Think wellingtons are only for meat eaters? Think again! Our new Plant Kitchen vegan wellington (available in store from 18 December) is this year’s must-try vegan main – it’s made from wheat and pea protein topped with a rich mushroom duxelle, then wrapped in crisp puff pastry.

Keep things fuss-free by serving the wellington alongside our Plant Kitchen triple-cooked roast potatoes, cauliflower and cheese bake and more star plant-based sides. Get them in store from 18 December.

The choc-tastic treat

If you’re like me and love oozy, melty chocolate, but you’re following a plant-based diet, you’re in luck – we’ve just launched a vegan version of our iconic melt-in-the-middle chocolate pudding. Available in store from 18 December, this oh-so-indulgent dessert serves six people and is filled with a hidden Belgian chocolate sauce.

Step into Christmas

Think pink

When it comes to Christmas tipples, it’s all about our prosecco rosé this year. Suitable for vegans, this bubbly is amazing served with canapés or alongside a fruity dessert. Made from glera and pinot noir grapes from the hilly north-east of Italy, it’s fragrant, fruity and delicate, with flavours of strawberries, raspberries and passion fruit.
