Preheat the oven to 220°C/200°C fan/gas mark 7. Heat a large frying pan over a medium-high heat. Add a splash of oil and tip in the onions (2) with a pinch of salt. Cook for 7 minutes until softened.

Remove from the heat and add the drained kidney beans (1 tin) and fajita seasoning (1 tbsp). Mash with a fork or potato masher until most of the beans are broken up. Mix in the egg (1), panko breadcrumbs (50 g) and tomato sauce (2 tbsp) until well combined. Season to taste with salt and pepper.

Using slightly wet hands, shape the bean burger mixture into 9 mini burger patties, placing them on a baking paper-lined tray as you go. Use your hands to flatten each patty slightly. Pop into the oven for 20 minutes, until golden brown.

Add the sweet potato fries (500 g) to a large baking dish and pop in the oven for 20 minutes, until golden brown. Top the fries with the cheese (100 g) (if you’d like) and return to the oven for a further 5 minutes until melted.

Slice the mini rolls (1 pack) in half and top with the burgers and lettuce (1). Serve alongside the thinly sliced baby peppers (1 pack) and baby cucumbers (1 pack), sweet potato fries and more smokehouse tomato sauce.
