Warming, healthy and seriously tasty, these DIY noodle soups are the answer to your midweek cooking prayers

I’m craving comfort food at this time of year – but that doesn’t necessarily equal stodgy carbs and Sunday roasts. Our new noodle bowls – which you can pick up in the Foodhall now – tick all the right January boxes. Simply choose your protein – whether it’s a thin steak to sear, marinated chicken or tofu – then add a selection of ready-prepped noodles and veg (no chopping required) and one of our exclusive Itsu Brilliant Broths. There are loads of combinations to try, but my current fave is the richly flavoured miso mushroom broth, alongside paprika tofu with edamame and aromatic vegetables with rice noodles. It all comes together in a few minutes and is delicious whether you’re giving #veganuary a go or just want to eat more veg – after all those mince pies, I know I do.
