Tom KerridgeIt may be chilly and grey outside, but out in the farms there’s a bounty of colourful, fresh fruit and veg to enjoy. M&S source all their produce from trusted farmers and growers who make sure they get the cream of the crop. From tender, hand-trimmed sprouts to beautifully sweet baby carrots and homegrown potatoes for the most incredible roasties, I’ve rounded up my pick of farm-fresh produce landing in the M&S Foodhall this December. Plus, some epic recipe ideas and tips for what to cook with it. Food that tastes amazing and does good for our farmers? It’s a no-brainer.
Maris Piper potatoes
In my humble opinion, roast potatoes are the most important part of a Christmas dinner, so you need a spud that will deliver! My choice is a Maris Piper – they go beautifully golden and crisp, while staying light and fluffy on the inside, plus they’re robust enough that they’ll be able to roast at high temperatures. My game-changer roast potatoes recipe will give you the crunchiest, most golden potatoes ever. When you’re not turning them into roast potatoes, Maris Piper potatoes are a fantastic all-rounder, with a lovely creamy texture that works wonders in mash, either on the side of your favourite stew or as the topping to a comforting cottage pie.
Brussels sprouts
Not all sprouts are created equal. M&S Food is the only retailer to painstakingly hand-trim all their prepared Brussels sprouts, so they're the perfect size and top quality. I like to think of sprouts as little mini cabbages, packed full of flavour. Unfortunately for these little veggies, we tend to over-boil them until they’re soggy and bland, but I like mine when they’ve got a bit of crunch. A good trick is to cook them directly in a hot pan with just butter and a splash of water, as in my recipe for never-soggy sprouts. Paired with crispy lardons, crumbled chestnuts and a knob of garlic and herb butter, it’s seriously good. Slice the cooked leftovers to add some lovely texture and colour to your Boxing Day turkey sandwich.
Easy peelers
Citrus fruits are at their best in winter, adding some much-needed zest and brightness to our table. M&S easy-peelers are 100% seedless, with a lovely tang and sweetness that is wonderful in vibrant slaws and salads, either sliced or juiced into the dressing. Juicy easy peelers and tender chicken thighs are a match made in heaven in my Christmas tacos recipe, roasted together until sticky and juicy, then stuffed into tacos with vibrant red cabbage and carrot, which are also at their peak right now. Use the zest in Christmas desserts too, like my 100% indulgent quattro chocolate panettone bread and butter pud with a gooey tiramisu twist.
Braeburn apples
British apple growing is a heritage farming tradition that we should be proud of in the UK, and there are still some lovely homegrown varieties to enjoy throughout December. M&S is the only retailer to tree-ripen their Braeburn apples at this time of year, meaning they can develop the most amazing sweet, honeyed flavour. I love them in crunchy, vibrant slaws and stuffed into this sticky hoisin pork bao buns recipe with gorgeous heritage pork belly, or simmered down into a spiced fruit compote, spiked with brandy. Or make them the main event, as in M&S Food team’s lush dessert recipe for granola-topped baked apples, which have all the spicy, warming flavours I’m craving right now.
Red cabbage
This bright brassica always has a special place on my Christmas table, braised down with spices and aromatics, like fresh ginger, mixed spice, whole cinnamon or caraway, until deliciously sweet and tender. Red cabbage is also fantastic very finely sliced (I like to use a mandolin) into slaws and salads, tossed in bright, zingy dressings with crunchy nuts, like walnuts or pecans, and enjoyed as a side to roast ham. A hefty veg, it’ll go a long way when you’re feeding a lot of people, too.
Parsnips
At this time of year, you can’t go wrong with parsnips, roasted until beautifully caramelised, sweet and nutty. M&S parsnips are always harvested in the morning to ensure they maintain their distinctive flavour, by trusted growers like Ben Madarasi, who they’ve worked with for more than 40 years.
Enhance their naturally sweet, nutty flavour by pan-frying or roasting them in honey or pair them with warming, robust spices, as in this spiced carrot and parsnip pilaf. They’re equally delicious as an alternative to potatoes in a cheesy, creamy gratin. But my favourite way to have them (when it’s not Christmas Day of course), is in my super-warming veg-packed curry with chilli butter and garlic naan.
Baby carrots
It doesn’t get better than a sweet, delicate, freshly harvested baby carrot at this time of year. M&S Baby Carrots are grown exclusively by Steven Jack, who they’ve worked with for almost 20 years. As well as growing some cracking-tasting carrots at his farm in the Scottish Highlands, he farms in harmony with nature, encouraging biodiversity and helping protect the land for generations to come. I think they work a treat with zesty, spicy flavours – try them roasted with a squeeze of orange juice, then generously piled on top of garlicky yogurt with a crunchy pistachio dukkah topping, as in this delicious roasted carrots recipe.
Brown onions
Lending a natural sweetness and subtle aromatic flavour to gravies and curries, stews and soups, the humble brown onion is an often overlooked seasonal hero. M&S onions are harvested from trusted M&S Select Farms for their robust flavour, each carefully selected to make sure they’re the best quality and freshness possible. Try slow-roasting this seasonal onion in this Middle Eastern-inspired roasted cauliflower recipe until deliciously sweet and soft – paired with robust spices and smoky cauliflower, it’s a dream dish!
