step 1
Heat 3 tbsp extra virgin olive oil in a large casserole pot over a medium heat. Add the red (1) and white onions (1), the leeks (1), the garlic (3 cloves) and the celery (2) along with a pinch of salt and cook for 10 minutes, until softened. Stir in the potatoes (400 g), carrots (2) and courgettes (1) and sweat down for a further 5 minutes.

Stir in the garlic granules (2 tsp) and onion granules (2 tsp), the oregano (1 tsp) and the bay leaves (2), and cook for 1 minute.

Stir in the chopped tomatoes (2 tins), butter beans (1 tin), white beans (1 tin) and vegetable stock (500 ml). Bring to a gentle simmer, then cover and cook for 25 minutes.

Stir in the cabbage (1/4) and kale (200 g) and cook for a further 5-10 minutes until all the veg is tender and cooked through.

Season to taste, then serve with parmesan (to taste), fresh basil (1 handful) and a dollop of pesto (2 tbsp) on top.
