Preheat the oven to 200°C/180°C fan/gas mark 6. Add the salmon fillets (1 pack) to a tray, top with the garlic butter (25 g) and season with salt and pepper. Cover with tinfoil and bake for 15 minutes, until cooked through.

Meanwhile, bring a large saucepan filled with water to a boil. Add a generous pinch of salt and the rigatoni (350 g). Cook for 11-13 minutes, until al dente. Add the peas (150 g) in the final 2 minutes. Reserve 1 cup of pasta water, then drain the pasta and peas.

Add the pasta and peas back to the pan and toss through the pesto (1 jar) and crème fraîche (3 tbsp). Add a splash of pasta cooking water if it’s a bit too dry. Mix until well combined, then add in the flaked salmon, any juices from the tray and the lemon juice (1/2). Season to taste with salt and pepper.
