Heat the oil (1 tbsp) in a large non-stick frying pan over a medium heat and cook the onion (1) for 4-5 minutes, until beginning to soften. Stir in the curry paste (1 jar), swirl 2 tbsp water into the empty jar and add this too. Cook for another 1-2 minutes, until fragrant.

Meanwhile, cook the rice (2 packs) according to the pack instructions.

Stir into the onions along with the lime (1) zest, juice and peas (250 g). Cook for 1-2 minutes over a high heat until the rice begins to crisp up – you want some bits to stick to the bottom of the pan – and the peas are tender.

Move everything to the side of the pan then add the eggs (3). Cook for 1 minute without stirring before gently scrambling for another minute, then stir everything together until well combined.

Stir through the coriander (1/2 pack) and mint (2 tbsp). Scatter with the crispy onion (2 tbsp) and more fresh coriander (as needed), mint (as needed) and lime (as needed) wedges on top to serve.
