Your Christmas cooking dilemmas solved

You’ve whittled down your shopping list of Christmas foodie gifts, bought the advent calendars and pre-ordered most of your Christmas food. But are you still musing over the starter and wondering how to stretch those leftovers into exciting new meals? And what about the booze? Our in-house food experts are here to help. Let’s go!

Prawn cocktail or paté? What’s the best Christmas starter?
“I’d actually go for a terrine this year. Our Best Ever Salmon and Prawn Terrine is a knockout; it consists of three beautiful layers and is fully wrapped in our Scottish oak-smoked salmon and topped with dill cream cheese and Honduran king prawns. It truly is the best terrine we’ve ever had, and it will be making an appearance on my table this Christmas Day,” – Penny West, M&S Lead Food Product Developer for Fish, Seafood and Charcuterie

I’m terrified of messing up the turkey! What should I do?
“I spend most days of the year refining our slow-cooked turkey range, and sourcing and eating the best-tasting turkeys. We pre-cook the turkeys using a sous vide technique, which creates the most succulent and tender texture, so all you need to do is pop them in the oven for just over an hour. For an alternative to turkey (as I spend most of the year eating it!), I go for beef – a bit of a classic roast rib of beef with Yorkshire puddings and beef dripping potatoes. Utterly delicious,” – Matt Dawson, M&S Lead Product Developer for Meat and Poultry

Christmas Day morning is always hectic. What's the best Christmas Day breakfast without putting in too much effort?
“With three teenagers, Christmas is chaos in our house. I pop one of our Collection Nocciolato Panettones on the kitchen table, made with Calabrian orange peel, Piemonte AOP butter and Piemonte hazelnuts. The texture is like a pillow – it’s just delicious. I make a pot of coffee and some Buck’s Fizz and everyone helps themselves,” – Kathryn Turner, Head of M&S Food Product Development

What can I do with leftover Christmas cake?
“Any leftover crumbs work beautifully in a quick no-churn ice cream or you could add it into a simple chocolatey tiffin for an extra-special Boxing Day treat. Our Collection Iced Christmas Cake is a centre-of-the-table showstopper, almost too beautiful to eat, with its delicately detailed poinsettia-inspired decoration. Slices are richly fruited, brandy soaked and perfectly matured, totally divine!” – M&S Food Product Developer for Cakes, Alice Birch

How do you balance your cheeseboard?
“Choose different strengths, colours and flavours and allow 100g to 150g of each cheese, per person. Our Collection Blue Stilton Jar, plus our creamy Somerset Brie and our rich, 6-Year-Aged Cornish Reserve Vintage Cheddar fit the bill. Also, choose different shapes and sizes. Fun fact: cheese boards look better with an odd number of cheeses!” – Rosie Eiduks, M&S Lead Product Developer for Dairy

Any leftover Christmas veg recipes that aren’t bubble and squeak?
“There are so many ways to use up veg after Christmas. Try slicing Brussels sprouts into my perfect turkey sandwich recipe or shred carrots and cabbage into a colourful festive slaw, and serve up with these Christmas tacos – both great recipes for using up leftover roast turkey. If you’ve got some dark leafy greens, throw them into this soothing super-juicy turkey orzo soup. And you didn’t ask, but this panettone bread and butter pud is a total favourite in my house – great if you’ve got a few slices of panettone leftover, all layered up with cinnamony butter and boozy festive custard” – Tom Kerridge, M&S chef ambassador

What wine do I serve with Christmas dinner?
“Our delightful Collection Châteauneuf-du-Pape Les Closiers, hails from one of France’s most celebrated wine regions, famed for its rich, full-bodied wines. With flavours of strawberries, cloves and herbs, it’ll sing when paired with your Christmas lunch, particularly if you’re opting for red meat. The delicate flavours of turkey call for our Collection Chablis. With vibrant citrus and tangy green apple notes, this crisp white is made from Chardonnay grapes in France’s Chablis region” – Caroline Thompson-Hill, M&S Head of Beers, Wine and Spirits

What's the best Christmas drink to round off the day?
“Christmas isn't Christmas without advocaat. We've just launched our first free-range egg advocaat and it's so delicious. I love it chilled served simply on its own or, even better, when it’s poured over a warm slice of Christmas pudding or mince pie. It’s almost like an alcoholic custard!” – Jenny Rea, M&S Lead Product Developer, Spirits and Cocktails
