Preheat a small (22cm) non-stick frying pan over a medium heat and add the cumin seeds (1/2 tsp). Toast for 1 minute until fragrant, then tip into a pestle and mortar and briefly crush.

Crack the eggs (4) into a jug and stir in the turmeric (1/2 tsp), ground cumin seeds and garam masala (1 tsp). Season with salt and pepper then stir in the chopped tomatoes (4), spring onions (1 bunch), green chillies (2) and coriander (1 bunch).

Sprinkle the roti (2) with a little water and cook in the oven at 200°C/180°C fan/gas mark 6 fan for 3 minutes. Keep warm under a clean tea towel.

Meanwhile, add a splash of neutral oil to the same pan you toasted the cumin seeds in, then pour in half of the egg mix. Cook for 2-3 minutes, until just set, then flip out onto a plate and carefully slide back into the pan to cook the other side for 1 minute, until cooked but not drying out. Repeat with the remaining egg mix.

Slide the omelette onto a board and cut in half, then serve with the dips (1 pack) and roti.
