Preheat the oven to 180°C fan and lightly butter a 20cm round baking dish. Combine the butter (50 g) with the cherry brandy (100 ml), sugar (100 g) and cinnamon stick (1) in a small saucepan and add the apples (4) and cherries (1 pack).

Bring to a simmer then reduce the heat and stew for 10 mins until the fruit has just started to soften.

Put the cornflour (2 tsp) in a bowl and stir in 2 tbsp of the cooking liquid before adding back into the pan and simmering for 1-2 minutes until thickened. There may be some excess sauce – keep this for drizzling on top of your breakfast porridge or on top of ice cream!

Meanwhile, mix the butter (2 tbsp) with the cinnamon (1 tsp) and use to spread the scones. Transfer the cherry mix to the pudding dish and top with the scones (2 packs), butter-side up, sprinkling with some sugar.

Bake in the oven for 25-30 mins until the top is golden and the fruit bubbling. Serve with a drizzle of cream (as needed) or a scoop of ice cream.
