Preheat the oven to 180°C fan. Prick the jacket potatoes (4) all over with a fork and place on a baking tray. Bake for 50 minutes – 1 hour, until cooked through.

Add the soured cream (4 tbsp), Marmite cheddar (150 g) and spring onions (1 bunch) to a bowl, stir to combine and season with salt and pepper.

Halve the cooked jacket potatoes and scoop out the flesh into the bowl with the soured cream. Mix thoroughly, mashing slightly to fully incorporate. Spoon back into the potato skins, top with a little more cheese and then bake for 15 minutes until golden.

Dress the salad leaves (as needed) with the lemony olive oil (as needed) and serve with the potatoes.
