Preheat the oven to 180°C fan. Wash the carrots (400 g) and trim off their ends. Peel the onions (2) and cut into chunky wedges. Arrange the carrots and onions on a baking tray, sprinkle with sea salt and squeeze over the juice of the orange (1). Bake for 30-40 minutes, stirring halfway, until the carrots are tender.

Meanwhile, place the whole garlic cloves (4 cloves) on a piece of tin foil, drizzle with olive oil and scrunch the foil to form a parcel. Bake alongside the carrots.

Toast the pistachios (2 tbsp) in a dry pan until fragrant. Roughly chop then mix with the dukkah (2 tsp).

Mix together the tahini (1 tbsp) and yogurt (5 tbsp). Squeeze the garlic cloves from their skins into the yogurt sauce. Season with salt and pepper.

Spread the tahini sauce onto a platter. Top with the warm carrots and sprinkle with the pistachio dukkah.
