step 1
Preheat the oven to 180°C/160°C Fan/Gas 4. Line a 12-cup muffin tray with paper muffin cases.

Combine the flour (150 g), baking powder (1 tsp), cinnamon (1 tsp), mixed spice (1 pinch) and a pinch of salt in a bowl; set aside. Using a stand mixer with the whisk attachment, or a hand-held electric whisk and bowl, whisk the eggs (2) and brown sugar (150 g) together for 3-4 minutes or until thick and pale. Add the vanilla (2 tsp) and oil (150 ml) and whisk for 1 minute.

Tip the flour mix into the bowl and whisk briefly to combine. Now fold in the grated carrots (150 g) and walnuts (50 g), using a spatula. Spoon into the muffin cases, dividing the mixture evenly.

Bake in the oven for 20 minutes or until a wooden cocktail stick inserted into the centre of one of the muffins comes out clean. Remove the tray from the oven and leave to cool.

To make the frosting, in a large bowl, whisk the cream cheese (225 g), butter (75 g) and orange zest (1) together, using a hand-held electric whisk, until smooth. Add the icing sugar (340 g) gradually, whisking after each addition until it is all incorporated. Cover and refrigerate for 15 minutes to firm up the frosting a little.

Once the muffins are cooled, spoon the frosting into a piping bag fitted with a plain nozzle and pipe on top. Sprinkle with a little cinnamon (as needed) and/or chopped walnuts (as needed).
