step 1
Cook the potatoes (300 g) until very soft, then remove them from the pan of water with a spider strainer or slotted spoon and drain them well (but keep the pan of water for the kale). Add the potatoes to a mixing bowl, along with the mustard (1/4 tsp), cheese (20 g) and egg yolk (1). Mash well
step 2
Cook the kale (40 g) for about three minutes, or until tender. Rinse it under a cold tap and then squeeze all the liquid out of it with your hands. Move it to a chopping board and chop it very finely. Use a spoon to mix it into the potato.

Use your hands to form balls (around 1 tbsp in size) and then press these into little cakes.

Heat 1 1/2 tbsp olive oil (as needed) in a frying pan over a medium heat and, when hot, fry three cakes at a time. They’ll need around three minutes on each side to be golden brown all over.
