step 1
Preheat the oven to 200°C/180°C Fan/Gas 6 with the grill element on.

Put the pudding rice (180 g) into a dry small frying pan and toast over a medium-high heat for 8 minutes or until the rice grains are lightly toasted.

Tip the toasted rice into a medium non-stick saucepan and add the milk (1 L) and vanilla pod (1) (split lengthways) and seeds. Bring to the boil over a medium-high heat and then reduce the heat to a simmer. Cook, stirring every 5 minutes, until the rice is tender; this should take around 20 minutes.

Meanwhile, place the apricot (6) or plum halves, cut side up, in a roasting dish and sprinkle with the brown sugar (50 g). Wave a cook’s blowtorch over the surface to caramelise lightly then place in the oven for 3–5 minutes to soften the fruit slightly. Sprinkle with the lemon (1).

In the meantime, whisk the egg yolks (3) yolks and sugar (100 g) together in a medium bowl until smoothly combined. Add the double cream (100 ml) and whisk again.

Once the rice is tender, remove the vanilla pod. Add a couple of spoonfuls of rice to the egg mixture and stir it in quickly. Pour this back into the rice pan and stir until well mixed. Place the saucepan back over a low heat and cook gently, stirring, for 5 minutes.

Spoon the rice pudding into 4 warmed serving bowls and stir a spoonful of clotted cream (4 tbsp) through each portion. Top each with a few roasted apricot halves or plums, sprinkle with toasted flaked almonds (30 g) and enjoy!
