For the potatoes

M&S rose harissa paste
For the whipped feta
1 tbsp
M&S extra virgin olive oil

Greek feta

For the herb salad

small red onion, thinly sliced

coriander leaf

mint leaves

Preheat oven to 180c fan.
step 2
Add the new potatoes (700 g) to a saucepan and cover with water. Salt the water and place the pan over a high heat and bring to a boil. Reduce to a simmer and cook the new potatoes for 15 minutes or until softened.

Mix the rose harissa paste (2 tbsp) and olive oil (2 tbsp) together and set aside.

For the whipped feta, add the olive oil (1 tbsp), Greek feta (150 g) and Greek yogurt (100 g) to a food processor and blend for 1 minute or until smooth. Next add the mint (3 sprigs) and pulse blend again for a few seconds. Transfer the mixture to a bowl and season to taste. Place in the fridge until needed.

Drain the potatoes and roughly crush them with your hands so that you end up with chunks. Lay them onto a lined tray and spoon over the harissa oil and toss them so that they are evenly coated. Sprinkle with a little salt and place them into the oven for 35-40 minutes or until crispy and charred in places.

When the potatoes are almost cooked, mix the red onion (1/2), coriander leaf (1 handful), mint leaves (1 handful), M&S Remarksable Value lemon (1/2) and olive oil (1 tbsp) together along with some seasoning. Spoon the whipped feta onto each serving plate and top with the potatoes. Add the herb salad to each plate and serve.
step 6 When the potatoes are almost cooked, mix the red onion (1/2), coriander leaf (1 handful), mint leaves (1 handful), M&S Remarksable Value lemon (1/2) and olive oil (1 tbsp) together along with some seasoning. Spoon the whipped feta onto each serving plate and top with the potatoes. Add the herb salad to each plate and serve.
