Whisk together the eggs (4), cream (200 ml), sugar (1 tbsp) and vanilla paste (1 tsp).

Spread the brioche (4 slices) with the salted caramel sauce (2 tbsp), then sandwich together to make two sandwiches.

Soak the sandwiches in the egg-cream mixture for 2 minutes, turning halfway through.

Heat the butter (1 knob) in a frying pan, then fry the sandwiches for a minute or so on each side, until golden. Serve with blueberries (to taste), crème fraîche (to taste) and a dusting of icing sugar (to taste).
