Add the port (1 bottle), sugar (100 g), cinnamon (2), star anise (3), cloves (4), nutmeg (1/4 tsp), vanilla (1 tsp), orange zest (1/2), lemon zest (1/2), pepper (1/2 tsp) and salt (1/2 tsp) into a saucepan and slowly bring to a boil. Simmer for 5 minutes while you peel and core the pears. Make sure to leave the stalk intact for decoration.

Add the pears (4) to the pan as well and simmer for 30 minutes. Turn the pears every so often to make sure they cook evenly.

Allow the pears to cool in the syrup. If you’ve got time, leave them in the syrup overnight so they turn a really gorgeous colour.

When it comes to serving, warm the pears through again and check the consistency of the syrup. You might need to boil it to reduce it down after you’ve removed the pears.

Serve a pear in a bowl with some of the syrup, sprinkle with granola (to taste) and a dollop of yogurt (to taste).
