Whisk the soy sauce (3 tbsp), vinegar (3 tbsp), chilli flakes (1 tsp), garlic (1 clove), ginger (2 cm), sesame oil (1 tsp) and maple syrup (1 tsp) and set aside. Meanwhile, toss together the carrot (1), cabbage (1/4) and spring onion (4) with a sprinkle of salt.

Pan-fry the gyozas (1 pack) according to the pack instructions. Toss half the dressing in the slaw, then serve the remaining dressing as a dipping sauce with the gyoza.
