Slice the apples (4) into rounds. Pour over the lemon juice (1) to prevent the apples from browning.

Add the pancake mix (1/2 box) to a bowl then whisk in 150ml of water.

Mix the sugar (4 tbsp) and cinnamon (1 tsp) in a bowl and set aside for later.

Heat at least 5cm of vegetable oil (as needed) in a saucepan over a high heat. Add a spoonful of the batter to the oil; if the mix bubbles and crisps up quickly, it’s ready.

Coat the apple slices in the batter and fry in batches until crisp and golden.

Transfer the fritters to a plate lined with kitchen paper to drain the excess oil. Dust with the cinnamon sugar.

Serve the apple fritters warm with a dollop of crème fraîche (to taste) that’s topped with an extra sprinkling of cinnamon.
