In large bowl, whisk the double cream (300 ml) until soft peaks form. Reserve a third and then fold the honey (3 tbsp) into the remaining cream.

Crush half the berries (2 punnets) in a bowl and fold this through the reserved cream.

Spoon the honey cream onto each meringue (8), followed by the raspberry cream, then gently spread the two over the base to create a ripple effect.

Top with the remaining fruit and the crumbled oat bars (2).
