Heat the oven to 180°C/160°C fan/gas mark 4. Toss the strawberries (350 g) in a roasting tray with the muscovado (3 tbsp) and the vanilla pod (1). Roast for 15-20 minutes until lightly caramelised.

Wash the rice (175 g) in a sieve under cold running water for 5 minutes. Add to a pan along with the milk (750 ml), double cream (100 ml), caster sugar (65 g) and bay leaf (1). Bring to a simmer and cook over a low heat for 35-40 minutes.

Serve the rice pudding warm or cold with the strawberries and some of their syrupy juices.
