Preheat the oven to 200°C/180°C fan/gas mark 6.

Heat a cast-iron pan or an ovenproof frying pan over a low heat. Add the caster sugar (150 g) and 100ml water. Stir until the sugar has dissolved.

Turn the heat up to high and simmer for 12-14 minutes, or until the syrup is a light golden-brown. Add the butter (65 g) and the seeds from the vanilla pod (1/2) and cook for 2-3 minutes, until a caramel forms.

Arrange the halved peaches (6) around the pan with the cut sides facing up, slightly overlapping to make sure the caramel layer is completely covered with peaches.

Roll out the puff pastry (320 g) f you’ll need enough to cover the peaches in the pan, with the edges folded underneath. Lay the pastry on top of the peaches and fold the edges under, as though you’re tucking in the peaches.

Use a sharp knife to make three small slits in the centre of the pastry. Put the pan in the oven for 45 minutes.

When the tart is cooked, carefully turn out the tart onto a plate. Slice, and serve each portion with a dollop of mascarpone.
